[Q] Backing up ROM of new phone

Hi all,

I have bought a new Chinese produced Android phone (quad core 1Gb Ram, 5"). When it arrives, I'd like to make a backup of the device in it's stock format. How do I do this? Is this called a Nandoid backup?

Also, how would I go about Rooting a non-name brand device?
